Danielle from HugandCookiesXOXO was kind enough to share another AWESOME recipe with me! As a broccoli and cheese and avocado lover, I  simply can't resist it.   Are you ready?? Get set! DIP!


Oven Fried Broccoli Bites

12-16 oz. fresh steamed broccoli
1 1/2 cup of grated mozzarella cheese
3 eggs
salt & pepper
1 cup of seasoned Italian breadcrumbs (I used aleia's GF)

Avocado Oil

Preheat oven to 375. Mix all the ingredients together in a large bowl.  Form patties by hand and lay on a cookie sheet (I used my PC stone) that has been oiled (I use AVOCADO OIL BY CHOSEN FOODS!!!!!) Bake in oven 20-30 mins until browned, turning once.

Avocado Cream Dipping Sauce:
Mix together 1 avocado (scooped) and 1-2T. sour cream, salt and pepper. 
Serve on the side as a dip!

 Easy 6 Ingredient White Chicken Chili 


 It doesn't get easier than this when you are craving a lighter- style fast chili.




1 can of white beans- any brand 

1 can crushed tomatoes with spices ( get jalapeno or garlic or w/chili seasoning -whatever strikes your fancy)

cooked chicken- 1/2 cup- make it REALLY easy and use perdue shortcuts or leftover chicken breast 

Chili powder seasoning to taste-  1 teaspoon +/-

1/4 cup chopped green pepper

cheddar cheese- as much as you'd like

* note, I was out of onion and would have used shy 1/4 cup finely chopped 
onion too


Mix all ingredients except cheese in a pot and simmer for 30-60 minutes.
Serve in a bowl with a side of bread and top with cheese

Even better- serve it in a BREAD BOWL

Makes 2 servings

Roasted Cauliflower with Parmesan and Bread Crumbs

1 head cauliflower, cut into 1/2 -1 inch florets
1/2 cup fresh bread crumbs Or gluten free bread crumbs
1/4 cup freshly grated Parmesan (I CONFESS, I DON'T MEASURE AND I'M SURE I USE MORE!!!!)
1/4 cup olive oil (AGAIN, I DON'T MEASURE BUT MAKE SURE THE FLORETS ARE WELL COATED!!!!!!
Salt and pepper to taste
Preheat oven to 400ยบ. 
Toss florets with olive oil, bread crumbs and cheese. Spread in a single layer on jelly roll sheet lined with nonstick foil. Season with salt and pepper. (since I use a lot of cheese I often don't need the salt) Roast 30-40 minutes, until nicely browned!!!! (we like ours verrrry browned!!!)

Sweet Potato and Spinach salad

Doesn't get easier than this!!
Cube sweet potatoes, toss in olive oil and season with salt, pepper and I use montreal steak seasoning.
Bake at 400 until tender and slightly browned.
Serve over a bed of baby spinach.
Toss with Pumpkin seeds and finish with balsamic vinaigrette. 

EASY, beautiful, nutritious lunch or dinner side salad with grilled chicken.

When it comes to cooking, I'm all about easy. I also like tasty. And I prefer it to look pretty.
So this bake, or quiche, if you can call it that,  fits the bill. What's the most fun about crustless quiches and egg bakes is that you can really add variety with ingredients you have on hand.

Preheat over to 375 
You'll need 1 package fresh spinach which is about 3- 4 cups
1 package of chicken sausages (4), like chicken apple or smoked chicken or garlic chicken
1 cup mozzarella-shredded
1 cup parmesan cheese divided 
8 eggs
salt and pepper
olive oil

Saute the spinach 2-4 minutes until wilted. I always like to drain it well in a colander, pushing out excess water for a few minutes.

Slice the sausage lengthwise and then chop into small pieces, Saute a few minutes in stick-free pan or with a small amount of olive oil until lightly browned.

Lightly grease a 12x9 pan
Place sausage and spinach in it evenly. 
Cover with half the parmesan and all the mozzarella.


Add the eggs and using a fork, lightly stir until everything is mixed.
Add salt and pepper to taste.
Top with remaining parmesan. Starting to look yummy!




And that's it. Easy right?

If I had onions on hand, which I usually do, I would have added 1/4 cup sauteed chopped onions or even scallions which I LOVE. 

Bake at 375 for about 30 minutes until browned and set in the middle.


I like to serve with fresh salsa to add a kick. Tonight I served with a side of roasted cauliflower since the oven was on anyway -gotta kill 2 birds at a time around here! 


What's nice is that this can be a great brunch, lunch or dinner. Even my kids polished it off.

Simple Turkey Roll Ups

 Ok, NOT the best picture . I do need a new camera huh? But these are WAY BETTER than they look!

Whether serving your family of 4, or a large crowd, these delicious turkey roll ups are super simple to make, fast and delicious. I've made them on Christmas Eve and they are just so easy. Everyone, even the kids, devoured them!



Ingredients:

Turkey
Stuffing
Gravy
Provolone
That's it! How easy right?







Start with sliced deli turkey. Ask the clerk to slice the pieces thick enough to roll.

1.25 or 1.5 pound or so will work with 1 box of stuffing.Depends how thick they are.

Cook stuffing according to package directions.

Cook gravy or open a jar of pre-made turkey gravy.

Put a thin layer of gravy in a glass pan to coat the bottom.

Working on a cutting board or plate, place 1 piece of turkey at a time. Spoon a nice amount of stuffing onto turkey. Roll up and place in pan. Continue until turkey and stuffing are used up.

Lay a half slice of provolone over each roll up.

Drizzle with remaining gravy.

Heat in oven on 325 until fully warm.

Great with a side of green beans or mashed potatoes.

Peanut Butter energy bites

My kids LOVE these!!!


NO BAKING

We used:

Quick cook oats( not instant oatmeal) We used organic

Honey

Smooth peanut butter ( we used organic here too)

2 tsps Ground flax seed ( this is optional but does add a health benefit)

Cinnamon



Can't give EXACT proportions because some peanut butter is thicker than others. Start with oatmeal in a bowl, add honey, a few good shakes of cinnamom ( maybe 2 teaspoons?) and PB.
If you use refrigerated peanut butter, I find them easy to roll, but let the PB warm up for 5 minutes or so first.

Once it looks like a good consistency, get down and get dirty and start rolling! Yes, it's a bit messy but definitely fun.

My kids have added baking chocolate chips occasionally as well.And this makes them even yummier!

Keep refrigerated and enjoy!

The kids grab one each time they walk past the fridge. Healthy snacking huh?

Roasted Cauliflower and garlic quiche 



I just LOVE this recipe. You can eat it plain or served with salsa. YUM!!!
2 1/2 cups caluiflower- chopped into 1/2 slices
olive oil
salt and pepper
3-5 cloves garlic( personal preference based on taste) finely chopped
1 small onion finely diced
1/2 cup bread crumbs
8 eggs
3/4 cup cottage cheese
1/2 cup grated parmesan
3 tbs spoon chopped parsley

Oven -425
Grease 9 inch pie plate
Toss chopped cauliflower with 2 tbs of olive oil and arrange on baking sheet. Roast about 12-15 minutes until tender

In large skillet, add 2 tbs olive oil over medium heat and add garlic and onions, cook 3-5 minutes until tender. add breadcrumbs and salt and pepper
toast 5-7 minutes.

Beat eggs in medium bowl. 
add cottage cheese and parm cheese
add parsley

spread the bread crumbs in the pie dish
top w/ cauliflower
pour on egg mixture
shake to spread the mixture
bake, rotating half way for 20-25 minutes until browned.
let cool 5-10 before slicing
